Blueberry Muffins

INGREDIENTS


  • 2 cups flour

  • ¾ cup sugar

  • 2 teaspoons baking powder

  • ¼ teaspoon salt

  • 2 cups fresh or frozen blueberries

  • ½ cup milk

  • ½ cup olive oil or butter melted

  • 1 egg

  • 1 teaspoon vanilla


DIRECTIONS


Combine the dry ingredients. In a large measuring cup, measure in milk and oil. Add in egg and vanilla and whisk together.


Toss the blueberries in with the dry ingredients. Pour wet ingredients into the dry ingredients. Stir together until just combined.


Spoon batter into greased muffin tins (I love my stoneware muffin pan!).


Bake at 375 degrees for 25-30 minutes.


Serve warm!
